Bean to bar and Dragées by Olivier Fernández

Oliver Fernandez’s workshop will teach students to prepare their own chocolate; from the most basic topics and techniques, while covering all aspects of chocolate making: cocoa’s origin, harvest process, bean selection, toasting, refinery and conching, finishing with the making of the chocolate bar.
